Tuna with Oranges and Shiitakes
Ingredients: 1 lb 3/4 inch tuna steaks, cut into 4 portions
1/4 cup orange juice concentrate
2 navel oranges
1 Tbsp fresh thyme, chopped
1 tsp soy sauce
2 cloves garlic, minced
1/4 tsp freshly ground black pepper
1/4 lb shiitake mushrooms, stemmed and thinly sliced
1. Preheat oven to 400 degrees.
2. Prepare 4 pieces of parchment paper or aluminum foil to form packages around fish.
3. Using a sharp knife, remove skin and white pith from oranges. Cut the segments away from their surrounding membranes, and squeeze any juice from the membranes into a bowl.
4. Stir in concentrate, thyme, soy sauce, garlic, and pepper.
5. Place a piece of tuna on paper or foil. Distribute mushrooms and orange slices over the tuna, and spoon orange juice mixture over the top.
6. Seal the packages and place on a baking sheet. Bake for 10-12 minutes (you may wish to open one package and check that the tuna is done to your taste).
7. Transfer packages to individual plates and serve.
