A different method for guessing when to go fishing: take a look at this chart for temperature preferences of saltwater fish, more, and cross-reference with the sea surface temperature map. This is probably a better method if you don't need to plan your trip months in advance and can leave on short notice, since water temperatures are difficult to predict over long time periods.
