Starving Artists' Fish
Ingredients: 4 fillets firm fleshed, mild tasting fish, about 6 oz. each
1 small jar marinated artichoke hearts, including marinade
4 Tbsp parmesan cheese
2 Tbsp butter or margarine
4 Tbsp toasted sliced almonds
large pinch tarragon
1. Preheat oven to 350 degrees.
2. Drain artichokes, placing marinade in a small saucepan. Add butter, cheese, and tarragon, and stir over heat until well-combined.
3. Chop half the artichoke hearts. Slice artichokes from the other portion into halves.
4. Place fish in a lightly buttered baking pan. Sprinkle with chopped artichokes, and place a half artichoke heart on each fillet. Cover all with sauce, and sprinkle with almonds.
5. Bake fish until flaky, about 10 minutes per inch of thickness.
