Grilled Fish in Orange Basil Butter
Ingredients: 4 fish steaks
1 stick butter (margarine ok, but not as good)
1/2 orange
1/4 tsp orange zest
2-3 Tbsp dried sweet basil, to taste (use less if fresh!)
1. Melt butter in a small saucepan.
2. Add juice and pulp from orange, orange zest, and basil.
3. Cook butter mixture over low heat until infused, about 5 minutes.
4. Grill fish, basting frequent with butter mixture.
5. Remove fish from grill, pour remaining butter mixture over fish, and serve.
