| Ingredients: | 4 | fish steaks | |
| 1 stick | butter (margarine ok, but not as good) | ||
| 1/2 | orange | ||
| 1/4 tsp | orange zest | ||
| 2-3 Tbsp | dried sweet basil, to taste (use less if fresh!) |
| Instructions | ||
| 1. | Melt butter in a small saucepan. | |
| 2. | Add juice and pulp from orange, orange zest, and basil. | |
| 3. | Cook butter mixture over low heat until infused, about 5 minutes. | |
| 4. | Grill fish, basting frequent with butter mixture. | |
| 5. | Remove fish from grill, pour remaining butter mixture over fish, and serve. | |
